Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • Oil for frying
  • 1 bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 1 can pineapple chunks, drained
  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 3 tbsp soy sauce
  • 1/4 cup brown sugar
  • 1 tsp ginger powder
  • 1 clove garlic, minced
  • 1 tbsp cornstarch dissolved in 2 tbsp water

Instructions:

  1. In a bowl, mix cornstarch, flour, and egg to make a batter. Dip chicken pieces in the batter.
  2. Fry the chicken in hot oil until crispy and golden brown. Remove and drain on paper towels.
  3. In a separate pan, sauté bell pepper, onion, and pineapple chunks until slightly softened.
  4. In a bowl, whisk together ketchup, rice vinegar, soy sauce, brown sugar, ginger, and garlic. Pour over the vegetables and cook until slightly thickened.
  5. Add the fried chicken to the sauce and toss to coat. Cook for a few more minutes.
  6. Mix cornstarch and water and add to the pan to thicken the sauce further.
  7. Serve the Sweet & Sour Chicken hot over rice or noodles.
