Ingredients:

  • 2 boneless, skinless chicken breasts, diced
  • 3 cups cooked white rice, cooled
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 4 tbsp soy sauce
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions:

  1. In a large skillet, heat 1 tbsp of vegetable oil over medium heat.
  2. Add diced chicken and garlic, season with salt and pepper, and cook until chicken is browned and cooked through.
  3. Push chicken to one side of the skillet and add another tbsp of oil. Pour beaten eggs into the skillet and scramble until cooked.
  4. Add mixed vegetables and cooked rice to the skillet. Stir in soy sauce and mix well.
  5. Cook for another 5-7 minutes, stirring occasionally, until everything is heated through.
  6. Serve hot, garnished with chopped green onions.
