  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 4 eggs
  • 1 cup vegetable oil
  • 3 cups grated carrots
  • 1 cup chopped walnuts
  • 1 cup crushed pineapple
  • 1 tsp vanilla extract
  • 8 oz cream cheese
  • 1/2 cup butter
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F and grease two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the oil, carrots, walnuts, pineapple, and vanilla extract.
  5. Pour the batter into the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool completely before frosting.
  7. To make the cream cheese frosting, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
