Ingredients:

  • 2 cups cooked white rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • Salt and pepper to taste
  • 2 green onions, chopped

Instructions:

  1. In a large skillet, heat sesame oil over medium heat.
  2. Add mixed vegetables and cook until slightly tender.
  3. Push the vegetables to one side of the skillet and crack the eggs on the other side.
  4. Scramble the eggs and mix with the vegetables.
  5. Add cooked rice, soy sauce, garlic powder, ginger powder, salt, and pepper.
  6. Stir well to combine all the ingredients and cook for another 2-3 minutes.
  7. Top with chopped green onions and serve hot.
