Ingredients:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup fresh pineapple chunks
  • 1 bell pepper, diced
  • 1 onion, sliced
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 3 tbsp rice vinegar
  • 2 tbsp ketchup
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, whisk together pineapple juice, soy sauce, rice vinegar, ketchup, brown sugar, garlic, and cornstarch.
  2. Heat vegetable oil in a large skillet over medium-high heat. Season chicken pieces with salt and pepper, then add them to the skillet. Cook until browned on all sides.
  3. Add bell pepper and onion to the skillet and cook until slightly softened.
  4. Pour the sauce over the chicken and vegetables in the skillet. Add pineapple chunks and stir to combine.
  5. Simmer for a few minutes until the sauce thickens and chicken is cooked through.
  6. Serve hot over rice or noodles.
