Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 cloves of garlic, minced
  • 1 cup beef broth
  • 1 cup shredded Gruyere cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. 1. Season the chicken breasts with salt and pepper.
  2. 2. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown on both sides. Remove from the skillet and set aside.
  3. 3. In the same skillet, melt butter and add the sliced onions. Cook until caramelized, about 15 minutes.
  4. 4. Add garlic and thyme to the onions and cook for another minute.
  5. 5. Pour in the beef broth and return the chicken breasts to the skillet. Simmer for 10-15 minutes until the chicken is cooked through and the sauce is thickened.
  6. 6. Preheat the broiler. Sprinkle shredded Gruyere cheese over the chicken and place under the broiler until the cheese is bubbly and golden brown.
